Apple cider vinegar (ACV) is commonly found on the shelves of most grocery stores or at health food retailers like Holland and Barrett. It is crafted from mashed, fermented apples combined with yeast and sugar. Some studies suggest ACV may help improve blood sugar levels, especially after meals, and could benefit people with type 2 diabetes.

In his video ‘Why take apple cider vinegar before bed’, Dr Berg discusses how acetic acid, the primary component in apple cider vinegar, exhibits strong anti-glycaemic properties. “This means it may help reduce your blood sugars after a meal,” he points out.

Dr Berg further added: “Acetic acid may also help reduce your blood sugars in the morning. Normally, your blood sugars should be low in the morning. There is something called the dawn phenomenon or down effect, where your blood sugars are higher in the morning. This is because the high blood sugar isn’t coming from your diet. It’s coming from your liver.

“Your liver is making extra glucose from protein, fat, and ketones. This is called gluconeogenesis. This could be caused by a problem with the blood sugars like insulin resistance, prediabetes, or diabetes.”

According to health experts, apple cider vinegar (acetic acid) might be a potential ally in managing blood sugar levels. Notably, when we experience high blood sugar, symptoms often emerge gradually and tend to become more apparent when levels soar significantly.

How acetic acid lowers blood sugar levels:

It inhibits enzymes responsible for breaking down starches.
It decreases the liver’s production of glucose through gluconeogenesis.
It may enhance insulin sensitivity, potentially aiding in insulin resistance, high blood sugar, and low blood sugar conditions.

Acetic acid slows down the rate at which the stomach empties its contents into the small intestine, a process called gastric emptying. This delay gives the body additional time to digest food, which may help mitigate the rapid increase in blood sugar levels that often follows a meal.

Additionally, acetic acid may hinder the function of disaccharidases, enzymes in the small intestine responsible for breaking down complex carbohydrates into simpler sugars. By limiting the activity of these enzymes, acetic acid decreases the amount of glucose that can be absorbed into the bloodstream.
